Huma’s Sooji Dryfruit halwa

Just about the same day when you decide to go on full fledged diet your mother makes something delicious which is hard to resist…😒✨💕👩‍🍳 And why this happens every single time still not sure 🤔 ☺️😓 My mother’s Sooji Dryfruit halwa in desi ghee for 2 people ✨😋 super yummy!

Ingredients:-
- 1/2 cup semolina (sooji)
- 6 green cardamoms
- 1/2 cup ghee (clarified butter)
- 1/4 cup mixed dried fruits (like raisins, chopped almonds, cashews)
- 3/4 cup sugar
- 2 cup warm water
- A few drops of yellow food color
- Saffron strands for garnish (optional)

Instructions:-
1. Heat ghee in a pan and roast semolina until it turns golden brown.
2. Add the mixed dried fruits and continue roasting for a couple of minutes.
3. In a separate pot, boil water with sugar and yellow food color until the sugar dissolves.
4. Slowly add the sugar water mixture to the roasted semolina while stirring continuously to avoid lumps.
5. Cook the mixture on low heat until it thickens and the ghee starts to separate from the sides of the pan.
6. Garnish with saffron strands if desired.
