Huma’s Huma’s Soya Vegetable Kebabs

Ingredients:-
- 1 cup boiled and crushed soy nuggets
- 1 bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 1 egg

Instructions:-
1. In a bowl, mix together soy sauce, olive oil, maple syrup, minced garlic, ground ginger, salt, and pepper to make the marinade.
2. Add the boiled and crushed soy nuggets to the marinade and let them marinate for at least 30 minutes.
3. Preheat the grill or grill pan over medium heat.
4. Mix the marinated soy nuggets, egg, bell pepper chunks, zucchini slices, and red onion and make it into flat tikkis.
5.Grill the kebabs for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
6. Serve the soy and vegetable kebabs hot with your preferred sides or a dipping sauce.
