Huma’s Super Juicy Barbecue Rack-o-Ribs- on the griddle ✨💕
| - 3 racks of lamb / mutton ribs with fat |
| - 2 cups vegetable broth-you can use plain water also. |
| - 1 cup barbecue sauce (any brand) |
| - Salt and pepper to taste |
| - Roast masala (any brand) |
| - Lemon juice |
| - Coriander powder- 1tbs |
Instructions:- |
| 1. Marinate the mutton ribs in a mixture of roast masala, lemon juice, coriander powder, salt, and pepper for at least 2 hours or overnight for better flavor absorption. |
| 2. In a large skillet, bring vegetable broth or water to a simmer. |
| 3. Place the marinated ribs in the skillet with the vegetable broth and simmer on cover for about 1 hour until the ribs are tender,l (75%) adding more broth if needed. Make sure they do not break ! |
| 4. Once the ribs are tender, remove them from the skillet and transfer them to the preheated griddle brushed with some oil or desi ghee. |
| 5. Now brush the ribs generously with barbecue sauce on both sides. |
| 6. Grill the ribs on the griddle, turning occasionally and basting with more barbecue sauce until they are caramelized and juicy, about 10-15 minutes. |
| 7. Once done, remove the ribs from the griddle and let them rest for a few minutes before slicing. |
| 8. Serve the juicy barbecue ribs hot and enjoy with your favorite side dishes. |
