Huma’s Special Sooji Dry Fruit Halwa made in desi ghee for 8 people:
| - 2 cups sooji (semolina) |
| - 2 cup desi ghee (clarified butter) |
| - 3 cup sugar |
| - 4 cups water hot |
| - Assorted dry fruits (like almonds, cashews, pistachios, raisins) - chopped |
| - 1 tsp cardamom powder |
| - A few strands of saffron (optional) |
| - Egg yellow color mixed in kewra water (for color) |
Instructions:- |
| 1. Heat desi ghee in a large pan on medium heat. |
| 2. Add the chopped dry fruits and sauté them on low heat . Remove them and set aside. Do not overdo ! |
| 3. In the same ghee, add the sooji and roast it on low heat until it turns golden brown and gives off a nutty aroma. |
| 4. In another pot, mix the water and sugar and heat until the sugar dissolves completely. |
| 5. Slowly add the sugar water to the roasted sooji while stirring continuously to avoid lumps. |
| 6. Cook the mixture on low heat until the water is absorbed and the halwa thickens. |
| 7. Add the cardamom powder and saffron strands. Mix well. |
| 8. Add the fried dry fruits and mix them in. |
| 9. Finally, add the egg yellow color mixed in kewra water to give the halwa a nice hue. Stir well to incorporate the color evenly. |
| 10. Cook for a few more minutes until the halwa reaches the desired consistency stirring consistently. |
| 11. Serve hot, garnished with extra dry fruits on top. |
