Huma’s Special Sooji Dry Fruit Halwa

Huma’s Special Sooji Dry Fruit Halwa made in desi ghee for 8 people:

Ingredients:-
- 2 cups sooji (semolina)
- 2 cup desi ghee (clarified butter)
- 3 cup sugar
- 4 cups water hot
- Assorted dry fruits (like almonds, cashews, pistachios, raisins) - chopped
- 1 tsp cardamom powder
- A few strands of saffron (optional)
- Egg yellow color mixed in kewra water (for color)

Instructions:-
1. Heat desi ghee in a large pan on medium heat.
2. Add the chopped dry fruits and sauté them on low heat . Remove them and set aside. Do not overdo !
3. In the same ghee, add the sooji and roast it on low heat until it turns golden brown and gives off a nutty aroma.
4. In another pot, mix the water and sugar and heat until the sugar dissolves completely.
5. Slowly add the sugar water to the roasted sooji while stirring continuously to avoid lumps.
6. Cook the mixture on low heat until the water is absorbed and the halwa thickens.
7. Add the cardamom powder and saffron strands. Mix well.
8. Add the fried dry fruits and mix them in.
9. Finally, add the egg yellow color mixed in kewra water to give the halwa a nice hue. Stir well to incorporate the color evenly.
10. Cook for a few more minutes until the halwa reaches the desired consistency stirring consistently.
11. Serve hot, garnished with extra dry fruits on top.
