- 4 nori sheets |
- 2 cups cauliflower rice or sushi rice |
- 2 tablespoons rice vinegar |
- 8 oz. salmon, cut into small cubes or tofu/ paneer |
- 2 tablespoons soy sauce |
- 1 cucumber, diced |
- 2 green onions, finely chopped |
- 1 avocado, diced (optional) |
- 2 teaspoons sesame seeds (white or black) |
- Soy sauce, wasabi, and Sriracha sauce for serving |
Instructions:- |
1. Preheat your oven to 350°F (175°C). |
2. In a bowl, mix the cauliflower rice and rice vinegar. Set aside. |
3. Lightly grease a muffin tray and carefully press a nori sheet into each muffin cup, creating a cup shape. |
4. Divide the cauliflower rice equally among the nori cups, pressing it down gently. |
5. Place the salmon cubes on top of the cauliflower rice in each cup, then drizzle with soy sauce. |
6. Bake in the preheated oven for 15-20 minutes, or until the edges of the nori are crispy. |
7. Once baked, remove the sushi cups from the oven and let them cool for a few minutes. |
8. Top the baked sushi cups with diced cucumber, green onion, and avocado. Sprinkle sesame seeds over the tops. |
9. Serve the baked sushi cups with additional soy sauce, wasabi, and Sriracha sauce on the side. |
