Ingredients:-
- 4 nori sheets
- 2 cups cauliflower rice or sushi rice
- 2 tablespoons rice vinegar
- 8 oz. salmon, cut into small cubes or tofu/ paneer
- 2 tablespoons soy sauce
- 1 cucumber, diced
- 2 green onions, finely chopped
- 1 avocado, diced (optional)
- 2 teaspoons sesame seeds (white or black)
- Soy sauce, wasabi, and Sriracha sauce for serving

Instructions:-
1. Preheat your oven to 350°F (175°C).
2. In a bowl, mix the cauliflower rice and rice vinegar. Set aside.
3. Lightly grease a muffin tray and carefully press a nori sheet into each muffin cup, creating a cup shape.
4. Divide the cauliflower rice equally among the nori cups, pressing it down gently.
5. Place the salmon cubes on top of the cauliflower rice in each cup, then drizzle with soy sauce.
6. Bake in the preheated oven for 15-20 minutes, or until the edges of the nori are crispy.
7. Once baked, remove the sushi cups from the oven and let them cool for a few minutes.
8. Top the baked sushi cups with diced cucumber, green onion, and avocado. Sprinkle sesame seeds over the tops.
9. Serve the baked sushi cups with additional soy sauce, wasabi, and Sriracha sauce on the side.
