Huma’s Cabbage and Tomato Rasam Soup

Ingredients:-
- 1 cup chopped cabbage
- 2 medium-sized tomatoes, chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin seeds
- 6-7 curry leaves
- 3-4 garlic cloves, minced
- 1/4 cup rolled oats
- Salt to taste
- Water
- Coriander leaves for garnish
- Rasam masala (any brand of your choice)

Instructions:-
1. Heat olive oil in a pan and add cumin seeds. Let them splutter.
2. Add minced garlic and curry leaves. Saute until garlic turns golden brown.
3. Add chopped cabbage and sauté for a few minutes until it softens slightly.
4. Add chopped tomatoes and cook until they become mushy.
5. Add around 2 cups of water, salt to taste, rasam masala and let the mixture come to a boil. Simmer for 10-15 minutes.
6. Once the rasam is cooked, add 1/4 cup of rolled oats and allow it to cook for another 5 minutes.
7. Adjust the consistency by adding more water if needed.
8. Garnish with fresh coriander leaves.
9. Serve hot and enjoy as a soup.
