Dinner 🩷 Huma’s Cabbage and Tomato Rasam Soup - with a twist of adding rolled oats to keep it low carb for diet ✨👩🍳💕
- 1 cup chopped cabbage |
- 2 medium-sized tomatoes, chopped |
- 1 tablespoon olive oil |
- 1 teaspoon cumin seeds |
- 6-7 curry leaves |
- 3-4 garlic cloves, minced |
- 1/4 cup rolled oats |
- Salt to taste |
- Water |
- Coriander leaves for garnish |
- Rasam masala (any brand of your choice) |
Instructions:- |
1. Heat olive oil in a pan and add cumin seeds. Let them splutter. |
2. Add minced garlic and curry leaves. Saute until garlic turns golden brown. |
3. Add chopped cabbage and sauté for a few minutes until it softens slightly. |
4. Add chopped tomatoes and cook until they become mushy. |
5. Add around 2 cups of water, salt to taste, rasam masala and let the mixture come to a boil. Simmer for 10-15 minutes. |
6. Once the rasam is cooked, add 1/4 cup of rolled oats and allow it to cook for another 5 minutes. |
7. Adjust the consistency by adding more water if needed. |
8. Garnish with fresh coriander leaves. |
9. Serve hot and enjoy as a soup. |
