Humas Tawa Chicken

Ingredients:-
- 500g chicken (cut into pieces)
- 2 tablespoons oil or ghee
- 1 large onion (finely sliced)
- 2-3 green chilies (slit)
- 1 tablespoon ginger-garlic paste
- 2 tomatoes (chopped)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- Chopped ginger (for garnish)
- Lemon wedges (for serving)

Instructions:-
1. Heat the Oil: In a large tawa or flat pan, heat the oil or ghee over medium heat.
2. Sauté Onions: Add the sliced onions and sauté until they turn golden brown.
3. Add Spices: Add the cumin seeds and slit green chilies. Stir for a minute until fragrant.
4. Incorporate Ginger-Garlic Paste: Add the ginger-garlic paste and cook for 2-3 minutes until the raw smell disappears
5. Add Tomatoes: Mix in the chopped tomatoes and cook until they soften and oil starts to separate.
6. Spice it Up: Add coriander powder, red chili powder, turmeric powder, and salt. Stir well to combine.
7. Add Chicken: Add the chicken pieces to the pan. Stir to coat the chicken with the spice mixture.
8. Cook Chicken: Cover the tawa and let the chicken cook on medium heat for about 15-20 minutes, stirring occasionally. If needed, add a little water to prevent sticking.
9. Final Touches: Once the chicken is cooked through and tender, check for seasoning. Adjust spices if necessary.
10. Garnish: Garnish with fresh coriander leaves and chopped ginger.
11. Serve: Serve hot with lemon wedges on the side and enjoy with naan, roti, or rice.
