Huma’s Zeppoles in Sugar

Ingredients:-
- 1 cup all-purpose flour
- 1 cup water
- 2 large eggs
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla (optional)
- Vegetable oil (for frying)
- 1/2 cup sugar (for coating)

Instructions:-
1. Make the Dough:
- Boil 1 cup water, 2 tablespoons sugar, and 1/4 teaspoon salt in a saucepan.
- Remove from heat and stir in 1 cup flour until smooth.
- Let it cool for 5 minutes.
- Beat in 2 eggs one at a time.
- Add 1 teaspoon baking powder and 1 teaspoon vanilla (if using).
2. Heat Oil:
- Heat vegetable oil in a deep pot to 350°F (175°C).
3. Fry Zeppoles:
- Drop small spoonfuls of dough into the hot oil.
- Fry for 2-3 minutes until golden brown, flipping halfway.
4. Drain and Coat:
- Remove zeppoles and place them on paper towels to drain.
- Roll them in 1/2 cup sugar while warm.
5. Serve:
- Enjoy your sweet zeppoles!
