My Mother's Sautéed Kale Recipe

Ingredients:-
- 1 bunch of kale, chopped
- 3-4 cloves garlic, chopped
- 2-3 whole red chillies
- 1 teaspoon cumin seeds
- Sea salt to taste
- 2 tablespoons mustard oil

Instructions:-
1. Prepare the Kale:
- Wash the kale thoroughly and chop it into bite-sized pieces. Set aside.
2. Heat the Oil:
- In a large pan or wok, heat the mustard oil over medium heat until it’s hot but not smoking.
3. Add Spices:
- Add the cumin seeds to the hot oil. Sauté for about 30 seconds until they start to splutter.
4. Sauté Garlic and Chillies:
- Add the chopped garlic and whole red chillies to the pan. Sauté for another 1-2 minutes until the garlic is golden and fragrant.
5. Add the Kale:
- Gradually add the chopped kale to the pan, stirring well to coat it with the oil and spices.
6. Season:
- Sprinkle sea salt over the kale. Stir to combine and ensure even seasoning.
7. Cook the Kale:
- Sauté the kale for about 5-7 minutes, stirring occasionally, until it wilts and becomes tender but still vibrant in color.
8. Serve:
- Once cooked, remove the sautéed kale from the heat and transfer it to a serving dish.
9. Enjoy:
- Serve warm as a side dish or as part of a main meal.
