Huma’s Coconut Chocolate Fluffy pancakes

Ingredients:-
Pancakes:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Toppings:
- Butter
- Shredded coconut
- Maple syrup
- Chocolate sprinkles
- Mixed dry fruits

Instructions:-
1. Mix Dry Ingredients:
In a bowl, combine 1 cup flour, 2 tablespoons sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
2. Mix Wet Ingredients:
In another bowl, mix 1 cup milk, 1 egg, 2 tablespoons melted butter, and 1 teaspoon vanilla.
3. Combine:
Pour the wet mixture into the dry mixture. Stir gently until just combined (a few lumps are okay).
4. Heat Skillet:
Preheat a non-stick skillet over medium heat and add a little butter.
5. Cook Pancakes:
Pour 1/4 cup of batter for each pancake. Cook until bubbles form (2-3 minutes), then flip and cook until golden (1-2 minutes).
6. Serve:
Stack pancakes on plates, add a pat of butter, drizzle with maple syrup, and top with shredded coconut, chocolate sprinkles, and mixed dry fruits.
