Huma’s Beetroot and Beans Chaat Salad: super nutritious quick dinner for sharp minds ✨💕👩‍🍳 ### Beetroot and Beans Salad Recipe for 2 People:

Ingredients:-
- 2 medium-sized beets - cut and boiled
- 1 cup of boiled kidney beans
- 2 teaspoons olive oil
- Sea salt and pepper to taste
- 1 small onion, chopped
- Fresh parsley or cilantro (coriander), chopped
- Organic cow cheese or shredded paneer
- 2 slices of sourdough bread or whole wheat bread
- Pepper jack cheese or any cheese of your choice.

Instructions:-
1. Peel and dice the beets. Boil them in water until tender, then drain and set aside.
2. In a pan, heat 1 teaspoon of olive oil and sauté the boiled beets until they are slightly caramelized. Season with sea salt and pepper.
3. Rinse and drain the kidney beans after boiling.
4. In the same pan, add another teaspoon of olive oil and sauté the kidney beans until they are heated through. Season with salt and pepper.
5. Mix the sautéed beets and kidney beans in a bowl.
6. Top the salad with chopped onions, parsley or cilantro, and your choice of organic cow cheese or shredded paneer.
7. Toast the sourdough bread slices and top them with pepper jack cheese.
8. Serve the Beetroot and Beans Salad alongside the slices of sourdough bread with cheese. Enjoy your delicious, nutritious meal!
