1. *Rolled Oats* - 1 cup |
2. *Water* - 4 cups (for cooking) |
3. *Turmeric Powder* - 1/2 teaspoon |
4. *Salt* - to taste |
5. *Mixed Vegetables* (like carrots, beans, pumpkin, eggplant, and potatoes) - 2 cups, chopped |
6. *Tamarind Paste* - 1 tablespoon (or to taste) |
7. *Brahmins Sambhar Masala* - 2 tablespoons (or to taste) |
8. *Oil* - 2 tablespoons (preferably coconut or vegetable oil) |
9. *Mustard Seeds* - 1 teaspoon |
10. *Curry Leaves* - a handful |
12. *Boiled Eggs* - 4, peeled and halved |
13. *Fresh Coriander Leaves* - for garnish |
Instructions:- |
1. *Cook the Oats*: In a pot, bring 2 cups of water to a boil. Add the rolled oats, turmeric powder, and a pinch of salt. Cook for about 5-7 minutes, stirring occasionally, until the oats are soft and cooked. Set aside. |
2. *Prepare the Vegetables*: While the oats are cooking, chop your mixed vegetables into bite-sized pieces. |
3. *Cook the Vegetables*: In another pot, add the chopped vegetables along with 2 cups of water. Bring to a boil and cook until the vegetables are tender (about 10-15 minutes) |
4. *Combine Oats and Vegetables*: Once the vegetables are cooked, add the cooked oats to the pot with the vegetables. Stir well to combine. |
5. *Add Tamarind and Sambhar Masala*: Stir in the tamarind paste and Brahmins sambhar masala. Mix thoroughly and let it simmer for 5-10 minutes. Adjust the consistency by adding more water if necessary. |
6. *Season the Sambhar*: In a small pan, heat the oil over medium heat. Add mustard seeds, allowing them to splutter. Then add curry leaves and dried red chilies. Stir for a few seconds to release the flavors. |
7. *Combine Seasoning with Sambhar*: Pour the hot seasoning into the oats and vegetable mixture. Stir to combine and let it simmer for an additional 5 minutes. |
8. *Add Boiled Eggs*: Gently add the halved boiled eggs to the sambhar. Simmer for another 5 minutes, allowing the eggs to soak up the flavors. |
9. *Taste and Adjust*: Taste the sambhar and adjust the salt or tamarind as needed. |
10. *Garnish and Serve*: Remove from heat, garnish with fresh coriander leaves, and serve hot as a nutritious soup . |
