1. 3 boneless, skinless chicken breasts |
2. 2 teaspoons lemon pepper seasoning |
3. 2 cups fresh tomatoes, puréed (or canned crushed tomatoes) |
4. 8 oz fresh mozzarella cheese, sliced |
5. 1/2 cup grated Parmesan cheese |
6. 1 teaspoon red chili flakes (adjust to taste) |
7. Fresh mint leaves, for garnish |
8. 1/2 cup basil pesto sauce |
9. Olive oil, for cooking |
10. Salt and pepper, to taste |
Instructions:- |
1. Pat the chicken breasts dry with paper towels. Season both sides with lemon pepper seasoning, salt, and pepper. |
2. Heat a large skillet over medium heat and add a couple of tablespoons of olive oil. |
3. Once the oil is hot, add the seasoned chicken breasts to the skillet. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and golden brown (internal temperature should reach 165°F / 75°C). Remove the chicken from the skillet and set aside. |
4. In the same skillet, add the puréed fresh tomatoes. Stir in the red chili flakes and cook for about 5 minutes to allow the flavors to meld. Season with salt and pepper to taste. |
5. Return the cooked chicken breasts to the skillet and spoon the tomato sauce over each piece. |
6. Layer the sliced fresh mozzarella cheese on top of the chicken, and sprinkle the grated Parmesan cheese evenly over the mozzarella. |
7. Cover the skillet with a lid and reduce the heat to low. Allow the cheese to melt, about 5-7 minutes. |
8. Once the cheese has melted, remove the skillet from the heat. Drizzle the basil pesto sauce over the top of the chicken. |
9. Garnish with fresh mint leaves. |
10. Serve the Chicken Parmesan hot, with additional tomato sauce on the side if desired. Serve with brown rice or garlic bread 😋 |
