| - 2 medium-sized beets - cut and boiled |
| - 1 cup of boiled kidney beans |
| - 2 teaspoons olive oil |
| - Sea salt and pepper to taste |
| - 1 small onion, chopped |
| - Fresh parsley or cilantro (coriander), chopped |
| - Organic cow cheese or shredded paneer |
| - 2 slices of sourdough bread or whole wheat bread |
| - Pepper jack cheese or any cheese of your choice. |
Instructions:- |
| 1. Peel and dice the beets. Boil them in water until tender, then drain and set aside. |
