Sweetened with a sugar substitute and topped with rich 87% dark chocolate, these bars are both satisfying and guilt-free.
1. Almonds - 1 cup |
2. Cashews - 1 cup |
3. Pistachios - 1 cup |
4. Sunflower seeds - 1/2 cup |
5. Pumpkin seeds - 1/2 cup |
6. Shredded coconut - 1/2 cup |
7. Dried raisins - 1/2 cup |
8. Peanut butter - 1 cup |
9. 87% dark chocolate - 100g (about 3.5 oz) |
10. Sugar substitute (e.g., stevia, erythritol) - 1/4 cup (adjust according to taste) |
12. Silicone chocolate or dessert molds - for setting the bars |
Instructions:- |
1. Crush half of the almonds, cashews, and pistachios in a food processor until coarsely ground. |
2. Reserve the other half of the nuts, cutting them into small pieces and setting them aside. |
3. In a utensil, heat the peanut butter over low heat, adding a very small amount of hot water to make it easier to mix. |
4. Stir in the sugar substitute and vanilla essence until well combined into a smooth paste. |
5. Pour the peanut butter paste into the crushed nuts. |
6. Add sunflower seeds, pumpkin seeds, shredded coconut, and dried raisins. |
7. Mix well until all ingredients are evenly combined. |
