1. 3 medium zucchinis (turai) |
2. 1 cup hung curd |
3. 1/2 teaspoon zeera (cumin seeds) |
4. 1/2 teaspoon mustard seeds |
5. 2 whole red chillies |
6. 8-10 curry leaves |
7. 1/4 cup chopped onion |
8. 2 garlic pods, minced |
9. 2 tablespoons mustard oil |
10. 1/4 cup shredded coconut |
12. Fresh cilantro for garnish |
Instructions:- |
1. Wash the zucchinis and cut them in half lengthwise. |
2. Scoop out the seeds to create a hollow center for stuffing. |
3. Heat mustard oil in a pan. |
4. Add zeera, mustard seeds, and whole red chillies to the oil. |
5. Once they start to splutter, add curry leaves, chopped onion, and minced garlic. |
6. Sauté until the onions turn golden brown. |
7. Add shredded coconut to the pan and sauté for another 1-2 minutes. |
8. Pour the tadka over the hung curd and mix well. |
9. Add sea salt to taste and mix again. |
10. Fill each zucchini half with the spiced hung curd and coconut mixture using a spoon. |
11. Garnish the stuffed zucchini boats with fresh cilantro. |
12. Serve chilled or at room temperature as a delightful appetizer or side dish. Or even a healthy low carb option for dinner 🥘 👩🍳😉 |
