Huma’s Bell Pepper and Egg Breakfast Rings ✨💕👩‍🍳 An eye pleasing healthy 10 min preparation.

Ingredients:-
1. 1 large yellow bell pepper
2. 1 large tomato
3. 2 eggs
4. 1/4 cup shredded mozzarella cheese
5. Salt and pepper to taste
6. Red pepper flakes (optional)
7. Olive oil for cooking

Instructions:-
1. Wash and slice the yellow bell pepper into 1/2-inch thick rings. Remove seeds and membranes.
2. Slice the tomato into thick rounds.
3. Heat a non-stick skillet over medium heat and add a small amount of olive oil.
4. Place the bell pepper rings in the skillet and cook for about 2 minutes on each side until they start to soften.
5. Crack an egg into each bell pepper ring, making sure the yolk stays intact.
6. Place a tomato slice on top of each egg.
7. Cover the skillet with a lid and cook for about 3-4 minutes, or until the egg whites are set but the yolks are still runny.
8. Sprinkle shredded mozzarella cheese over the top.
9. Season with salt, pepper, and red pepper flakes.
10. Carefully lift the bell pepper rings with a spatula and serve immediately.
