1. 1 large yellow bell pepper |
2. 1 large tomato |
3. 2 eggs |
4. 1/4 cup shredded mozzarella cheese |
5. Salt and pepper to taste |
6. Red pepper flakes (optional) |
7. Olive oil for cooking |
Instructions:- |
1. Wash and slice the yellow bell pepper into 1/2-inch thick rings. Remove seeds and membranes. |
2. Slice the tomato into thick rounds. |
3. Heat a non-stick skillet over medium heat and add a small amount of olive oil. |
4. Place the bell pepper rings in the skillet and cook for about 2 minutes on each side until they start to soften. |
5. Crack an egg into each bell pepper ring, making sure the yolk stays intact. |
6. Place a tomato slice on top of each egg. |
7. Cover the skillet with a lid and cook for about 3-4 minutes, or until the egg whites are set but the yolks are still runny. |
8. Sprinkle shredded mozzarella cheese over the top. |
9. Season with salt, pepper, and red pepper flakes. |
10. Carefully lift the bell pepper rings with a spatula and serve immediately. |
