Instructions:- |
| 1. Wash and slice the yellow bell pepper into 1/2-inch thick rings. Remove seeds and membranes. |
| 2. Slice the tomato into thick rounds. |
| 3. Heat a non-stick skillet over medium heat and add a small amount of olive oil. |
| 4. Place the bell pepper rings in the skillet and cook for about 2 minutes on each side until they start to soften. |
| 5. Crack an egg into each bell pepper ring, making sure the yolk stays intact. |
| 6. Place a tomato slice on top of each egg. |
| 7. Cover the skillet with a lid and cook for about 3-4 minutes, or until the egg whites are set but the yolks are still runny. |
| 8. Sprinkle shredded mozzarella cheese over the top. |
