Ingredients:-
1. **Mixed Vegetables**: 2 cups (carrots, beans, lauki, tinda, parwal)
2. **Onion**: 1 medium, chopped
3. **Tomatoes**: 2 medium, chopped
4. **Drumsticks**: 2-3, cut into 2-inch pieces
5. **Tamarind Pulp**: 1/4 cup (adjust to taste)
6. **Water**: 4 cups
7. **Rasam Powder**: 2 tablespoon (store-bought or homemade). I used Brahmins Rasam masala. ✨
8. **Salt**: to taste
9. **Fresh Coriander Leaves**: for garnish
**For the Tadka:**
11. **Mustard Seeds**: 1 teaspoon
12. **Cumin Seeds (Jeera)**: 1 teaspoon
13. **Curry Leaves**: a few
14. **Dried Red Chilies**: 1-2 (optional)

Instructions:-
1. **Prepare Tamarind Water**: If using a tamarind block, soak a small lemon-sized piece in warm water for 10-15 minutes, then squeeze and strain to get the pulp. If using store-bought pulp, skip this step.
2. **Cook Vegetables**: In a large pot, add the mixed vegetables, drumsticks, and chopped onions. Pour in 4 cups of water and bring to a boil. Cook until the vegetables are tender (about 10-15 minutes).
3. **Add Tomatoes and Spices**: Once the vegetables are cooked, add the chopped tomatoes. Cook for another 5 minutes until the tomatoes are soft. Stir in the tamarind pulp, rasam powder, and salt. Mix well and let it simmer for about 5-10 minutes. Adjust consistency by adding more water if needed.
4. **Prepare Tadka**: In a small pan, heat the oil over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds, curry leaves, and dried red chilies (if using). Sauté for a few seconds until fragrant.
5. **Combine Tadka with Rasam**: Pour the hot tadka over the simmering rasam. Stir well and let it cook for another 2-3 minutes to allow the flavors to meld.
6. **Garnish and Serve**: Remove from heat and garnish with freshly chopped coriander leaves. Serve hot with plain white rice.
