Huma’s Anda Kofta Curry ✨💕👩‍🍳

Ingredients:-
For the Kofta:
- 2 lbs minced chicken or beef (makes around 15 balls)
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1 teaspoon meat masala (any brand you like)
- Salt to taste
For the Curry:
- 2 large onions, finely sliced
- 4 boiled eggs, peeled and kept whole
- 2-3 green chilies, slit (optional)
- 1 teaspoon sabut garam masala (whole spices, such as bay leaf, cloves, cardamom, and cinnamon)
- 1 teaspoon red chili powder (adjust to taste)
- 1 tablespoon coriander powder
- 1 teaspoon meat masala
- 1 cup yogurt, whisked
-1/2 cup oil
- Salt to taste
- Water as needed
- Chopped cilantro (hara dhaniya) for garnish

Instructions:-
Prepare the Kofta:
1. Mix the Kofta Ingredients: In a large mixing bowl, combine the minced chicken, finely chopped onion, ginger-garlic paste, red chili powder, coriander powder, meat masala, and salt. Mix well until all the ingredients are thoroughly combined.
2. Form the Kofta Balls: - Divide the mixture into equal portions and shape each portion into a ball. You should get around 15 kofta balls.
Prepare the Curry:
3. Sauté the Onions: In a large pan, heat oil over medium heat. Add the sliced onions and sauté until they turn golden brown.
4. Add Spices: Add ginger-garlic paste, slit green chilies, and the sabut garam masala. Sauté for a few minutes until fragrant.
5. Add Ground Spices: - Add red chili powder, coriander powder, and meat masala. Mix well and cook for another 2-3 minutes.
6. Incorporate Yogurt: Lower the heat and slowly add the whisked yogurt, stirring continuously to avoid curdling. Cook for 5-7 minutes until the oil begins to separate from the gravy.
7. Add Water: Add enough water to reach your desired consistency for the curry. Bring it to a gentle simmer.
8. Add Kofta: Gently add the raw kofta balls into the simmering curry. Cover and cook on low heat for about 15-20 minutes, or until the koftas are cooked through. Be careful when stirring to avoid breaking the kofta balls.
9. Add Boiled Eggs: After the kofta is cooked, gently add the boiled eggs to the curry and let them simmer in the gravy for an additional 5 minutes to absorb flavors.
10. Final Seasoning: Check for seasoning and adjust salt and spices as needed.
11. Garnish: Once done, turn off the heat and garnish with chopped cilantro.
Serving
Serve the Anda Kofta Curry hot, with the boiled eggs nestled in the gravy, alongside naan, roti, or steamed rice. Enjoy your flavorful dish!
