Huma’s Cauliflower Fried Rice

A perfect low carb dinner excellent for keto, paleo, anti-inflammatory diets.

Ingredients:-
- 1 head of cauliflower
- 1 head of cauliflower
- 1 bell pepper, diced
- 1 cup lettuce and 1 cup carrots-shredded
- Salt and pepper to taste
- Chili sauce (adjust to your spice preference)
- 2 tablespoons soy sauce
- 1/2 teaspoon Ajinomoto powder
- 2 tablespoons oil for cooking

Instructions:-
1. Wash and chop the cauliflower into florets. Pulse the florets in a food processor until they resemble rice-like grains.
2. Heat oil in a large pan over medium heat. Add diced onions and bell peppers. Sauté until they are tender.
3. Add the shredded lettuce to the pan and cook for another minute.
4. Add the cauliflower rice to the pan. Stir well to combine with the vegetables.
5. Season with salt, pepper, chili sauce, soy sauce, and Ajinomoto powder. Mix everything thoroughly.
6. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is cooked through but still slightly crunchy.
7. Taste and adjust the seasoning if needed.
8. Serve hot as a delicious and healthy alternative to traditional fried rice.
