| - 1 ripe avocado for garnish |
Instructions:- |
| 1. Heat a non-stick skillet over medium heat. |
| 2. Place the whole wheat tortilla in the skillet. |
| 3. Crack the 2 whole eggs directly onto the tortilla in the skillet. |
| 4. Use a spatula to gently spread the eggs over the tortilla to cover it evenly. |
| 5. Spoon the pasta or pizza sauce over the eggs on the tortilla. |
| 6. Sprinkle grated cheese over the sauce. |
