Huma's Dil Ki Thandak Dessert

**Huma’s Dil Ki Thandak Dessert✨💕👩‍🍳Innovated this super yummy summer treat for my guests that I intended to make with what was available at home. There was no name to it though 🧐When the guests ate it they said dil mein thandak padh gyi and that’s how I found the name of this dessert😋😋 Full of mango and cream goodness with super healthy sabudana which is known to calm your liver along with your taste buds.

Ingredients:-
- 1 cup soaked sabudana (tapioca pearls)
- 2 cups milk
- 2 tbsp cornflour
- 1/2 cup sugar
- Plain pound cake -cut into 16 slices or as required
- 4 ripe mangoes for puree
- 1 cup heavy cream
- 1/2 cup condensed milk
- Powdered coconut
- Chopped pistachios

Instructions:-
1. In a saucepan, combine soaked sabudana, milk, cornflour, and sugar. Cook on medium heat, stirring constantly until the mixture thickens to a pudding-like consistency. Let it cool.
2. Cut the plain pound cake into slices that fit the bottom of your dessert platter.
3. Peel and puree the mangoes in a blender until smooth.
4. In a separate bowl, whip the heavy cream until stiff peaks form. Then, gently fold in the condensed milk and mango puree to make a creamy mixture.
5. In a deep dessert platter, start layering the dessert. Arrange a layer of pound cake slices at the bottom, followed by a layer of the sabudana and milk kheer mixture.
6. Next, add a layer of the mango cream mixture on top of the sabudana layer.
7. Repeat the layering process with another layer of cake slices, sabudana kheer, and mango cream.
8. Garnish the top with swirls of mango puree, powdered coconut, and chopped pistachios.
9. Chill the dessert in the refrigerator for a few hours before serving to allow the flavors to meld together.
10. Serve and enjoy this delightful "Dil Ki Thandak" dessert with your guests!
