Huma’s Moonshine Salad- A tropical salad made out of pan roasted Asparagus (shatavri), cabbage, green onions, shaljam key pattey, with a burst of orangy citrus sensation mixed with rich creaminess ✨💕👩🍳
- 1 small head of cabbage, shredded |
- 1 bunch of kale, stems removed and chopped |
- 1 bunch of turnip leaves, chopped |
- 1 bunch of asparagus, pan-roasted in a tsp of olive oil and sea salt |
- 2 green onions, chopped |
- 3 small oranges, peeled and segmented |
- 1/2 cup shredded paneer or goat cheese |
- Sea salt to taste |
- 1/4 cup olive oil |
- 1/4 cup vinegar |
- Chopped dates and mixed seeds for garnish |
Instructions:- |
1. In a large mixing bowl, combine the shredded cabbage, chopped kale, turnip leaves, pan-roasted asparagus, green onions, and orange segments. Toss gently to mix well. |
2. In a separate bowl, whisk together the shredded paneer, sea salt, olive oil, vinegar, and mayonnaise to make the dressing. |
3. Pour the dressing over the salad and toss until everything is well coated. |
4. Divide the salad into 3 serving bowls. |
5. Sprinkle chopped dates and mixed seeds over the top of each salad bowl for garnish. |
