My mothers recipe for Gond/ Panjiri

Ingredients:-
- 1 cup ragi (finger millet) flour
- 1 cup ghee
- 1 cup powdered brown sugar (crushed organic gur)
- 1/2 cup edible gum (gond)
- 1/4 cup almonds, chopped
- 1/4 cup cashews, chopped
- 1/4 cup black raisins
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 2 tbsp chia seeds
- 1/4 cup shredded coconut
- 1 tsp cardamom powder
- 1/2 tsp nutmeg powder

Instructions:-
1. Heat 1/4 cup of ghee in a pan and fry the edible gum (gond) until it puffs up. Remove and keep aside.
2. In the same pan, roast the ragi flour in the remaining ghee until it turns golden brown and fragrant.
3. Add the chopped almonds, cashews, black raisins, sunflower seeds, pumpkin seeds, chia seeds, makhana, and shredded coconut. Mix well and roast for a few minutes.
4. Add the powdered sugar, cardamom powder, and nutmeg powder. Mix everything thoroughly.
5. Finally, add the fried edible gum (gond) and mix well. Turn off the heat.
6. Allow the mixture to cool down completely before storing it in an airtight container.
7. Your nutritious Gond Panjiri with ragi flour, additional seeds, makhana, and coconut is ready to be enjoyed!
