Chopt’s Mediterranean Tahini Bowl

Ingredients:-
- 1 head of cauliflower
- 1 can of chickpeas
- 1 cucumber
- 1 bell pepper
- 1 cup cherry tomatoes
- 1/2 red onion
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/2 cup chopped celery
- 1/2 cup tortilla chips
- 1 avocado
- 2 cups mixed lettuce and kale
- 1/4 cup tahini sauce
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Olive oil
- Salt and pepper to taste
-1/2 cup tofu

Instructions:-
1. Preheat the oven to 400°F (200°C).
2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Spread it on a baking sheet, drizzle with olive oil, salt, and pepper, then bake for 20-25 minutes until tender.
3. Rinse and drain the chickpeas, then toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 20-25 minutes until crispy.
4. Dice the cucumber, bell pepper, cherry tomatoes, tofu, red onion, celery, avocado, and tortilla chips. Mix them in a bowl with the chopped parsley, mint, corn, lettuce, and kale.
5. In a small bowl, whisk together the tahini, lemon juice, minced garlic, salt, and pepper. Adjust seasoning to taste.
6. To assemble the bowl, divide the cauliflower rice among bowls, top with the vegetable mixture, roasted chickpeas, and tortilla chips. Drizzle with tahini sauce and garnish with additional herbs if desired.
