- 1 head of cauliflower |
- 1 can of chickpeas |
- 1 cucumber |
- 1 bell pepper |
- 1 cup cherry tomatoes |
- 1/2 red onion |
- 1/4 cup chopped parsley |
- 1/4 cup chopped mint |
- 1/2 cup chopped celery |
- 1/2 cup tortilla chips |
- 1 avocado |
- 2 cups mixed lettuce and kale |
- 1/4 cup tahini sauce |
- 2 tablespoons lemon juice |
- 2 cloves garlic, minced |
- Olive oil |
- Salt and pepper to taste |
-1/2 cup tofu |
Instructions:- |
1. Preheat the oven to 400°F (200°C). |
2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Spread it on a baking sheet, drizzle with olive oil, salt, and pepper, then bake for 20-25 minutes until tender. |
3. Rinse and drain the chickpeas, then toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 20-25 minutes until crispy. |
4. Dice the cucumber, bell pepper, cherry tomatoes, tofu, red onion, celery, avocado, and tortilla chips. Mix them in a bowl with the chopped parsley, mint, corn, lettuce, and kale. |
5. In a small bowl, whisk together the tahini, lemon juice, minced garlic, salt, and pepper. Adjust seasoning to taste. |
6. To assemble the bowl, divide the cauliflower rice among bowls, top with the vegetable mixture, roasted chickpeas, and tortilla chips. Drizzle with tahini sauce and garnish with additional herbs if desired. |
