Huma’s Shami Kebabs for 8 people

Ingredients:-
- 2 cups boneless beef or lamb or chicken, cubed
- 1 cup split chickpeas (chana dal), soaked for a few hours
- 1 large onion, chopped
- 3-4 green chilies, chopped
- 1-inch ginger, chopped
- 6-8 cloves of garlic
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 2-3 tablespoons oil
- Fresh coriander leaves, chopped
- 2 eggs (optional, for binding)

Instructions:-
1. Boil the boneless meat and split chickpeas in a pot or cooker until they are tender. Dry any excess water by stirring ok high flame until all water is dried out.
2. In a meat blender, add the boiled meat and chickpeas along with chopped onion, green chilies, ginger, garlic, cumin seeds, coriander powder, garam masala, red chili powder, and salt. Blend until you get a smooth mixture.
3. Transfer the mixture to a bowl and add fresh coriander leaves. Mix well.
4. Shape the mixture into small round patties or kebabs.
5. In a pan, heat oil. You can optionally dip each kebab in beaten egg before frying for a crispier texture.
6. Fry the kebabs until they are golden brown on both sides.
7. Serve hot with mint chutney or sauce of your choice.
