Huma’s Khoya Seviyan (Vermicelli) for 15 people: ✨💕👩🍳
| - 750g vermicelli (thin Sivaiyyein) |
| - 1 cup ghee |
| - 10-12 cardamoms, crushed |
| - 2 cups heavy cream |
| - 2 liters milk |
| - 1.5 cups sugar (adjust to taste) |
| - 250g khoya |
| - 1-2 tsp kewra water |
| - Assorted dry fruits (almonds, cashews, pistachios, raisins) |
| -1 cup hot water |
Instructions:- |
| 1. Heat ghee in a large pan, add crushed cardamoms, and roast until fragrant. |
| 2. Add vermicelli and roast until golden brown. |
| 3. Pour in hot water then milk and heavy cream, bring to a boil, then simmer until vermicelli is cooked and the mixture thickens. |
| 4. Add sugar, khoya, and kewra water. Mix well until combined. |
| 5. Cook for a few more minutes until the khoya melts and blends in. |
| 6. Finally, add the dry fruits and cook for another 2-3 minutes. |
| 7. Serve the Khoya Seviyan warm, garnished with more dry fruits if desired. |
