Huma’s Khoya Seviyan

Huma’s Khoya Seviyan (Vermicelli) for 15 people: ✨💕👩‍🍳

Ingredients:-
- 750g vermicelli (thin Sivaiyyein)
- 1 cup ghee
- 10-12 cardamoms, crushed
- 2 cups heavy cream
- 2 liters milk
- 1.5 cups sugar (adjust to taste)
- 250g khoya
- 1-2 tsp kewra water
- Assorted dry fruits (almonds, cashews, pistachios, raisins)
-1 cup hot water

Instructions:-
1. Heat ghee in a large pan, add crushed cardamoms, and roast until fragrant.
2. Add vermicelli and roast until golden brown.
3. Pour in hot water then milk and heavy cream, bring to a boil, then simmer until vermicelli is cooked and the mixture thickens.
4. Add sugar, khoya, and kewra water. Mix well until combined.
5. Cook for a few more minutes until the khoya melts and blends in.
6. Finally, add the dry fruits and cook for another 2-3 minutes.
7. Serve the Khoya Seviyan warm, garnished with more dry fruits if desired.
