- 2 medium potatoes, peeled and shredded |
- 1 cup of spinach, chopped |
- 1/2 onion, finely chopped |
- 2 cloves of garlic, minced |
- 1/4 cup corn flour |
- 1/4 cup corn flour |
- 1 egg |
- Salt, lemon pepper seasoning, and pepper to taste |
- Vegetable oil for frying |
Instructions:- |
1. In a mixing bowl, combine the shredded potatoes, chopped spinach, onion, garlic, corn flour, water, egg, salt, lemon pepper seasoning, and pepper. Mix thoroughly until all ingredients are well incorporated. |
2. Heat vegetable oil in a pan over medium heat. |
3. Take a spoonful of the mixture and carefully place it in the hot oil, flattening it slightly with the back of the spoon to form a fritter. |
4. Fry the fritters for about 3-4 minutes on each side, or until they are crispy and golden brown. |
5. Once cooked, remove the fritters from the pan and place them on a paper towel to absorb any excess oil. |
