- 4 cups basmati rice |
- 1 kg beef, with bones |
- 2 large onions, sliced |
- 2-inch ginger, grated |
- 10-12 cloves garlic, minced |
- Whole spices (cinnamon, cardamom, cloves, bay leaves) |
- 1 cup yogurt |
- 1 cup ghee |
- Fresh coriander and mint leaves |
- Salt to taste |
Instructions:- |
1. In a large pot, combine beef with bones, sliced onions, grated ginger, minced garlic, whole spices, and enough water to cover the ingredients. |
2. Bring to a boil, then reduce heat and simmer until the beef is tender and the broth is flavorful (approximately 1-2 hours). |
3. Strain the broth and set it aside. Remove the beef pieces from the bones and set them aside. |
4. In another pot, heat ghee and sauté the beef pieces until browned. Remove and set aside. |
5. Add the soaked basmati rice to the same pot and sauté for a few minutes. |
6. Pour in the strained beef broth, add yogurt, salt, and mix well. Bring to a boil, then reduce heat, cover, and cook until the rice is done. |
7. Once the rice is cooked, add the browned beef pieces back to the pot and gently mix. |
8. Garnish with fresh coriander and mint leaves before serving. |
