Huma’s Beef Biryani Moradabadi style

Ingredients:-
- 4 cups basmati rice
- 1 kg beef, with bones
- 2 large onions, sliced
- 2-inch ginger, grated
- 10-12 cloves garlic, minced
- Whole spices (cinnamon, cardamom, cloves, bay leaves)
- 1 cup yogurt
- 1 cup ghee
- Fresh coriander and mint leaves
- Salt to taste

Instructions:-
1. In a large pot, combine beef with bones, sliced onions, grated ginger, minced garlic, whole spices, and enough water to cover the ingredients.
2. Bring to a boil, then reduce heat and simmer until the beef is tender and the broth is flavorful (approximately 1-2 hours).
3. Strain the broth and set it aside. Remove the beef pieces from the bones and set them aside.
4. In another pot, heat ghee and sauté the beef pieces until browned. Remove and set aside.
5. Add the soaked basmati rice to the same pot and sauté for a few minutes.
6. Pour in the strained beef broth, add yogurt, salt, and mix well. Bring to a boil, then reduce heat, cover, and cook until the rice is done.
7. Once the rice is cooked, add the browned beef pieces back to the pot and gently mix.
8. Garnish with fresh coriander and mint leaves before serving.
