Here's an authentic recipe for Chole Bhature for 2 people, a popular dish in North Indian cuisine:
| Ingredients for Chole (Chickpea Curry): |
| - 1 cup dried chickpeas (or 1 can of cooked chickpeas) |
| - 1 large onion, finely chopped |
| - 2 tomatoes, pureed |
| - 2-3 cloves of garlic, minced |
| - 1-inch piece of ginger, grated |
| - 1-2 green chilies, finely chopped |
| - 1 teaspoon cumin seeds |
| - 1 teaspoon coriander powder |
| - 1/2 teaspoon turmeric powder |
| - Salt to taste |
| - 1 teaspoon garam masala |
| - Salt to taste |
| - Fresh cilantro leaves for garnish |
| - Cooking oil |
| Ingredients for Bhature (Fried Bread): |
| - 1 cup all-purpose flour (maida) |
| - 1/2 cup yogurt |
| - 1/2 teaspoon baking powder |
| - 1/4 teaspoon baking soda |
| - Oil for frying |
Instructions:- |
| 1. If using dried chickpeas, soak them overnight in water. Cook the soaked chickpeas in a pressure cooker with salt until soft. If using canned chickpeas, rinse and drain them. |
| 2. Heat oil in a pan, add cumin seeds, and let them splutter. Add onions and sauté until they turn golden brown. |
| 3. Add garlic, ginger, and green chilies. Sauté for a minute. Add tomato puree and cook until the oil separates. |
| 4. Add all the dry spices - coriander powder, turmeric, red chili powder, garam masala, and salt. Cook for a few minutes. |
| 5. Add the cooked chickpeas and some water. Simmer for 10-15 minutes until the flavors are well combined. Garnish with fresh cilantro. |
| 6. For the Bhature, mix flour, yogurt, baking powder, baking soda, and salt in a bowl. Knead into a soft dough. Let it rest for 2 hours. |
| 7. Divide the dough into small balls. Roll out each ball into a circle. Heat oil in a pan and fry the Bhaturas until they puff up and turn golden brown. |
| 8. Serve the hot Chole with Bhature, sliced onions, and lemon wedges. |
