Here's an authentic recipe for Chole Bhature for 2 people, a popular dish in North Indian cuisine:

Ingredients:-
Ingredients for Chole (Chickpea Curry):
- 1 cup dried chickpeas (or 1 can of cooked chickpeas)
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 2-3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1-2 green chilies, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro leaves for garnish
- Cooking oil
Ingredients for Bhature (Fried Bread):
- 1 cup all-purpose flour (maida)
- 1/2 cup yogurt
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- Oil for frying

Instructions:-
1. If using dried chickpeas, soak them overnight in water. Cook the soaked chickpeas in a pressure cooker with salt until soft. If using canned chickpeas, rinse and drain them.
2. Heat oil in a pan, add cumin seeds, and let them splutter. Add onions and sauté until they turn golden brown.
3. Add garlic, ginger, and green chilies. Sauté for a minute. Add tomato puree and cook until the oil separates.
4. Add all the dry spices - coriander powder, turmeric, red chili powder, garam masala, and salt. Cook for a few minutes.
5. Add the cooked chickpeas and some water. Simmer for 10-15 minutes until the flavors are well combined. Garnish with fresh cilantro.
6. For the Bhature, mix flour, yogurt, baking powder, baking soda, and salt in a bowl. Knead into a soft dough. Let it rest for 2 hours.
7. Divide the dough into small balls. Roll out each ball into a circle. Heat oil in a pan and fry the Bhaturas until they puff up and turn golden brown.
8. Serve the hot Chole with Bhature, sliced onions, and lemon wedges.
