| Ingredients: for **Sarson ka Saag:** |
| - 250g spinach (optional) |
| - 1 small bunch of fenugreek leaves (methi) |
| - 2-3 green chilies, chopped |
| - 1-inch piece of ginger, chopped |
| - 4-5 cloves of garlic, chopped |
| - 1 large onion, finely chopped |
| - 2 tomatoes, chopped (optional) |
| - 1/2 cup cornmeal (makki ka atta) |
| - 5 tbsp mustard oil |
| -1 tbs zeera |
| - whole red chilies dry - 6 |
| - 500g mustard greens (sarson) |
| Ingredients: for **Makki ki Roti:** |
| - 2 cups cornmeal (makki ka atta) |
| - Warm water for kneading |
| - Salt to taste |
| - Ghee or butter for cooking |

| 1. Clean and chop mustard greens, spinach, and fenugreek leaves. |
| 2. Boil the greens in a pressure cooker with salt, turmeric, green chilies, ginger, and garlic until they are soft and well-cooked. |
| 3. Blend the cooked greens to a coarse paste. |
| 4. Heat mustard oil in a pan or earthed pot and add chopped onions, ginger, garlic, dry whole red chillies, zeera and sauté until golden brown. |
| 5. Add chopped tomatoes and cook until they are soft. |
| 6. Add the blended greens mixture and cook for another 10-15 minutes. |
| 7. Add cornmeal gradually to the mixture, stirring continuously to avoid lumps. |
| 8. Cook for another 10-15 minutes until the saag is thick and well-cooked. |
| 9. Adjust the seasoning with salt, red chili powder, and ghee. Serve hot with Makki ki Roti. |
| Instructions: for **Makki ki Roti:** |
| 1. In a large bowl, mix cornmeal and salt. Gradually add warm water and knead it into a soft dough. |
| 2. Divide the dough into equal-sized balls and flatten them using your palms. |
| 3. Place a ball of dough between two sheets of plastic wrap or parchment paper and gently flatten it into a round roti. |
| 4. Heat a griddle or tawa over medium heat. Place the roti on it and cook for a few minutes until brown spots appear. |
| 5. Flip the roti and cook the other side. Apply ghee or butter on both sides while cooking. |
| 6. Remove from the griddle and serve hot with sarson ka saag. |
