| - 4 green squash, sliced |
| - 1 teaspoon cumin seeds (zeera) |
| - 1 onion, finely chopped |
| - 1 teaspoon mustard seeds |
| - 1/2 teaspoon turmeric powder (haldi) |
| - 1/2 teaspoon red chili powder |
| - 1 teaspoon coriander powder |
| - 1 teaspoon bhaji masala (any brand) |
| - Salt to taste |
| - 6-8 cherry tomatoes |
| - Green chilies and fresh cilantro for garnish |
| - Water |
Instructions:- |
| 1. In a non-stick pan, dry roast cumin seeds until fragrant. |
| 2. Add chopped onions and mustard seeds. Sauté until onions are translucent. |
| 3. Add turmeric powder, red chili powder, coriander powder, and bhaji masala. Mix well. |
| 4. Add sliced green squash and cherry tomatoes. Stir gently. |
| 5. Squeeze the lemon slices over the mixture, sprinkle salt, and add a splash of water. Stir and cover with a lid. |
| 6. Let it cook on low heat until the squash is tender, adding more water if needed and stirring occasionally. |
| 7. Once cooked, garnish with chopped green chilies and fresh cilantro. |
| 8. Serve hot with roti or rice. |
