Huma’s Instant Carrot Pudding (Gajrela)

Huma’s Instant Carrot Pudding (Gajrela) for 2 people: on a rainy sloppy evening try this heart warming delicacy and it will sure uplift your mood ✨👩‍🍳💕

Ingredients:-
- 2 cups almond milk or regular milk
- 2 cups finely chopped carrots
- 3 cardamom pods, crushed
-1/2 cup rice uncooked
- Sugar (as per taste)
- 1/2 cup heavy cream
- Grated coconut, slivered almonds, pumpkin seeds, almonds (for garnish)

Instructions:-
1. Blend 2 cups of almond milk and 2 cups of finely chopped carrots along with rice in a blender until smooth.
2. In a deep pan, add the crushed cardamom pods and the blended carrot-milk mixture. Cook on low heat until the milk is absorbed, and the carrots and rice are fully cooked, stirring occasionally.
3. Add sugar as per your taste preference and mix well.
4. Stir in 1/2 cup of heavy cream and cook for a few more minutes until the mixture thickens.
5. Once the desired consistency is reached, remove from heat.
6. Dish out the carrot pudding into serving bowls.
7. Garnish with grated coconut, slivered almonds, pumpkin seeds, and almonds.
