| - 2 cups almond milk or regular milk |
| - 2 cups finely chopped carrots |
| - 3 cardamom pods, crushed |
| -1/2 cup rice uncooked |
| - Sugar (as per taste) |
| - 1/2 cup heavy cream |
| - Grated coconut, slivered almonds, pumpkin seeds, almonds (for garnish) |
Instructions:- |
| 1. Blend 2 cups of almond milk and 2 cups of finely chopped carrots along with rice in a blender until smooth. |
| 2. In a deep pan, add the crushed cardamom pods and the blended carrot-milk mixture. Cook on low heat until the milk is absorbed, and the carrots and rice are fully cooked, stirring occasionally. |
| 3. Add sugar as per your taste preference and mix well. |
| 4. Stir in 1/2 cup of heavy cream and cook for a few more minutes until the mixture thickens. |
| 5. Once the desired consistency is reached, remove from heat. |
| 6. Dish out the carrot pudding into serving bowls. |
| 7. Garnish with grated coconut, slivered almonds, pumpkin seeds, and almonds. |
