- 1/2 cup semolina (sooji) |
- 6 green cardamoms |
- 1/2 cup ghee (clarified butter) |
- 1/4 cup mixed dried fruits (like raisins, chopped almonds, cashews) |
- 3/4 cup sugar |
- 3/4 cup sugar |
- A few drops of yellow food color |
- Saffron strands for garnish (optional) |
Instructions:- |
1. Heat ghee in a pan and roast semolina until it turns golden brown. |
2. Add the mixed dried fruits and continue roasting for a couple of minutes. |
3. In a separate pot, boil water with sugar and yellow food color until the sugar dissolves. |
4. Slowly add the sugar water mixture to the roasted semolina while stirring continuously to avoid lumps. |
5. Cook the mixture on low heat until it thickens and the ghee starts to separate from the sides of the pan. |
6. Garnish with saffron strands if desired. |
