Boneless Mughlai Chicken Handi recipe ✨👩🍳💕 |
- 500 grams boneless chicken, cut into pieces |
- 2 tablespoons ghee (clarified butter) or oil |
- 2 medium onion, finely chopped |
- 2 teaspoons ginger-garlic paste |
- 2 green chilies, slit |
- 1 teaspoon turmeric powder |
- 1 teaspoon red chili powder and 1tsp degi mirch |
- 1 teaspoon cumin seeds |
- 1 teaspoon coriander powder |
- 1 teaspoon garam masala |
- 1 cup yogurt, whisked |
- 1/4 cup cashew nut paste (grind cashews with a little water to make a smooth paste) - 1 cup fresh cream (optional) |
- Salt to taste |
- Fresh cilantro leaves for garnishing and few green chillies |
-Kasoori methi 1 tbs |
👩🍳You also need authentic clay pot (handi) and two pieces of charcoal (koyla) ✨ |
Instructions:- |
1. Heat ghee or oil in a handi (a traditional Indian cooking pot) over medium heat. |
2. Add the chopped onions and sauté until golden brown. |
3. Add ginger-garlic paste and green chilies. Cook for a minute until the raw aroma disappears. |
4. Add turmeric powder, red chili powder, degi mirch, cumin seeds, coriander powder, and garam masala and kasuri methi. Mix well and bhoon it ! |
5. Add the boneless chicken pieces and cook until they are browned and cooked through. |
6. Reduce the heat and add whisked yogurt. Stir continuously to avoid curdling. |
7. Add cashew nut paste and mix well. Cook for a few minutes until the mixture thickens. |
8. Burn two charcoals (koyla), put in a bowl and pour some desi ghee or cooking oil on top so that it produces smoke. Place this bowl in between the handi and cover with lid. Let it infuse the smoke for 15 min on simmer. |
9. Garnish with fresh cilantro leaves. |
10. Decorate with fresh cream (optional) |
11.Serve hot with naan bread, rice, or roti. |
