Huma's Spinach Cheese Pinwheels

Innovated this recipe because my kids hate spinach 😒 Agar aapkey bacchey spinach sey nafrat kartey hain (which is soo healthy 🤷🏻‍♀️) and you want to avoid all arguments 🤦🏻‍♀️) try this pinwheel recipe and see your 1kg spinach all gone within minutes into their blood and bodies ! And no maida in this recipe. Also no oven needed 😉 Just simple basic kitchen ingredients. Must try !

Ingredients:-
- 3 cups whole wheat flour
- 1kg fresh spinach, whole leaves washed ( no need to cut)
- 2 cup Amul cheese, grated
- 1 teaspoon cumin seeds
- 1 teaspoon red chili flakes (adjust to taste)
- 1 and 1/2 teaspoon salt (adjust to taste)
- 4 cloves of garlic, minced
- 3 teaspoon dried rosemary or hara dhaniya
- Water, as needed for dough
- vegetable oil, for brushing 3 tbs
- 1/2 for spinach and 1 for dough
- like paratha ka aata.

Instructions:-
1. In a large bowl, combine the whole wheat flour, salt, oil and cumin seeds. Gradually add water while kneading until a soft dough forms. Set aside for 15-20 minutes to rest. It should look like parathey ka aata.
2. Meanwhile, in a pan pour some oil and mix together the spinach, minced garlic, red chili flakes, and dried rosemary. Season with a pinch of salt so your spinach does not taste pheeka!
3. On a lightly floured surface, roll out all the dough ( together) into a big shape, approximately 1/4 inch thick.
4. Spread the spinach and cheese mixture evenly over the rolled-out dough in two lines.
5. Starting from one end, tightly roll the dough into a log, similar to a Swiss roll. Seal the edges by pressing lightly.
6. Using a sharp knife, slice the log into 1/2 inch thick pinwheels. Tap them to flatten just a little bit !!
7. Preheat tawa and brush with oil. Place 2-3 pinwheels on the tawa and cover the lid. Now turn them and cook again on both sides until golden brown.
8. Once done, remove from the tawa and let them cool for a few minutes. Don’t feed too hot unless if you want to
9. Serve the spinach pinwheels warm as a delicious appetizer or snack with ketchup or your favorite chutney …. Enjoy!
I sprinkled some mayonnaise and sesame seeds on few of the pinwheels and they looked beautiful ! You can try your own variation to garnish.
