I love experimenting with different flavors and creating culinary delights for my loved ones.This evening as i rummaged through my pantry, my eyes stumbled upon a bag of plump, dried figs, also known as anjeer sitting there for quite a while . And I could not resist the temptation to create something extraordinary with this delightful fruits. Inspired by my creative instincts and the desire to utilize the anjeer, I decided to make a luscious dessert called Anjeer ki Rabri. And turned out yummier than expected!
- 1 liter milk |
- 10-12 dried figs (anjeer), finely chopped |
- 1 cup milk powder |
- 4-5 green cardamoms, crushed |
- 1/2 cup sugar (adjust to taste). If your milk powder is already sweet please add less sugar and taste it ! |
- A pinch of saffron strands for garnish |
- 2 tablespoons pumpkin seeds (optional, for garnishing) or pistachios |
Instructions:- |
1. In a heavy-bottomed pan, pour the milk and bring it to a boil over medium heat. |
2. Reduce the heat to low and let the milk simmer, stirring occasionally to prevent it from sticking to the bottom. |
3. Add the chopped figs and continue to simmer the milk for about 20-25 minutes, or until it reduces to about half its original quantity. |
4. Stir in the milk powder and crushed cardamoms, and cook for an additional 5 -10 min allowing the flavors to blend. |
5. Add sugar to the mixture and stir well until it dissolves completely. Continue to simmer for another 5-10 minutes. |
6. Once the rabri has thickened to your desired consistency, remove it from the heat and let it cool slightly. |
7. Garnish the rabri with saffron strands and sprinkle pumpkin seeds on top. Also decorate with edible silver leaves once completely cooled off ! |
8. Serve chilled or as per your preference. |
