Huma's Amiya ka saalan

Innovated some great food on a Friday night with famous qawwalis in the background ! It seems my kitchen “Alexa” also loves qawwalis so much that she runs the voice command in a wink ☺️ Thank you girl ! ✨

Ingredients:-
- 1 medium-sized bottle gourd (lauki), peeled and cut into cubes
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 green chili, slit
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- Salt to taste
- 1 full Amiya (peeled and cut)
- 1 cup water
- Fresh coriander leaves for garnish

Instructions:-
1. Heat oil in a pan and add cumin seeds. Let them splutter.
2. Add chopped onions and sauté until they turn translucent.
3. Add chopped tomatoes and cook until they soften.
4. Stir in turmeric powder, red chili powder, coriander powder, and salt. Mix well.
5. Add the cubed bottle gourd pieces and mix to coat them with the spices.
6. Pour in the water and bring it to a boil. Reduce the heat, cover, and let it simmer until the bottle gourd is cooked through.
7. Once the bottle gourd is cooked, one full Amiya and mix well. Adjust the consistency by adding more water if needed.
8. Let it simmer for a few more minutes to allow the flavors to meld.
9. Garnish with fresh coriander leaves.
10. Serve hot with steamed rice or roti.

Actually made lauki gosht (chicken) with a twist tonight and it has turned out unbelievably delicious. MashaAllah 😇
Literally dumped the chicken, oil, lauki, salt, kharey garam masaley, garlic (without chopping), onions and tomatoes (also just randomly chopped), red chilly powder, sabut dhaniya, salt and turmeric.
Everything together at one time with no hassle of bhooning at at on slow to medium flame for about 15-20 min.
Open your pot and sauté/ bhoon everything together on high flame for 5 min until oil seperate.
✨Now comes the twist!!! Add “One Full” khatti meethi amiya (unriped mango). It should neither be too sour nor too sweet! Cook again on slow flame until the amiya is soft though may not fully mash!
Now add cut green chillies and garnish with slivered ginger and cilantro (hara dhaniya) 🤤 I promise if your family is not a big fan of eating lauki try this receipe and they will fall in love ! Will become a must add to your weekly menu and eating lauki is sunnah and healthy so …
