Huma's 100 % Vegetarian Boti Saag

100 % Vegetarian Boti Saag …✨💕👩‍🍳 Sounds crazy ? My parents have been suggesting that I should focus on posting healthy recipes on Huma’s Bhavarchi khana (the low carb, anti inflammatory, diabetic friendly, heart healthy) that I usually love to innovate and cook in order to shed the extra pounds. Let’s see how it goes though would still post gormet food whenever I make and feel excited about ✨

Ingredients:-
1. Paalak, methi (mix) - 2 or 3 bunches paalak, 1 bunch methi
2. Garlic cloves - 5
3. Mustard oil - 2tsp
4. Soya chunks - 3/4 cup boiled and squeezed
5. Zeera - 1tsp
6. Onion - 1/2
7. Salt to taste
8. Keema masala or regular masalas (red chilly powder, dhaniya, haldi - mix 1tsp)

Instructions:-
1. In a shallow pan put all greens along with garlic and salt. Add a sprinkle of water. Let it cook for 10 min on very slow flame. It will steam!
You can also do this in microwave!
2. Boil the soya chunks until they enlarge and squeeze access water. Keep aside
3. Now in a frying pan add oil, zeera, onion and sauté for 5 min. Add the steamed greens along with soya chunks. Add masala #8 and stir fry for 5-10 min.
Serve with ragi roti (millet Roti) or brown rice and some yogurt (dahi)
Total calories per plate- 150, serves 4 . Enjoy ✨💕👩‍🍳
