Huma's Super Romantic Beet Root Raita

Ingredients:-
- 4 medium-sized beetroots, peeled, and grated
- 2 cups plain yogurt
- 1 teaspoon sea salt (adjust to taste)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds (zeera)
- 4 cloves of garlic, finely chopped
- 4 green chillies, finely chopped
- 4 tablespoons fresh cilantro (coriander), chopped
- 2 tablespoons oil (preferably mustard oil)

Instructions:-
1. Grate the beetroot and boil on high flame for 5 min. Remove and squeeze the water and keep the beetroot aside.
2. In a bowl, whisk the yogurt (dahi) until smooth. Mix the boiled and grated beetroot to the dahi.
3. Heat oil in a small pan on medium heat. Add mustard seeds and let them splutter. Then add cumin seeds and sauté for a few seconds until they release their aroma.
4. Add chopped garlic to the pan and sauté until it turns golden brown. Be careful not to burn it.
5. Remove the pan from the heat and pour the tadka over the beetroot-yogurt mixture and mix well. Make sure the tadka is evenly distributed.
6. Garnish the raita with chopped green chillies and fresh cilantro.
7. Refrigerate the raita for at least 30 minutes before serving to allow the flavors to meld together.
8. Serve chilled and enjoy your delicious Beetroot Raita as a side dish with your favorite Indian meal like khichdi aur plain roti.
Note: This recipe yields approximately 8 servings. You can adjust the quantities accordingly if you need to serve more or fewer people
