- 1 lb boneless, skinless chicken thighs |
- 2 tablespoons olive oil |
- 2 cloves garlic, minced |
- 1 teaspoon ground cumin |
- 1 teaspoon ground coriander |
- 1 teaspoon paprika |
- 1/2 teaspoon ground turmeric |
- Salt and pepper to taste |
- Juice of 1 lemon |
- 4 cups mixed greens (lettuce, spinach, arugula) |
- 1 cucumber, diced |
- 1 cup cherry tomatoes, halved |
- 1/2 red onion, thinly sliced |
- 1/4 cup chopped fresh parsley |
- Hummus and tzatziki sauce for serving |
- Pita bread or pita chips (optional) |
Instructions:- |
1. In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, pepper, and lemon juice to make the marinade. |
