One pan Baked Caprese Chicken with Green Beans and corn ✨😋👩🍳
- 4 boneless, skinless chicken breasts |
- Salt and pepper to season |
- 4 tablespoons olive oil |
- 4 cloves garlic, minced |
- 1 cup cherry tomatoes, halved |
- 1/4 cup balsamic vinegar |
- 8 oz fresh mozzarella, slice |
- 8 oz fresh pepper jack cheese (for that spicy flavor) |
- Fresh basil leaves, chopped |
- Balsamic glaze (optional) |
- Green beans ( washed) |
- Boiled corn halves or kernels |
Instructions:- |
1. Preheat the oven to 200°C (400°F). |
2. Season the chicken breasts with salt and pepper on both sides. |
3. In an oven-safe skillet or baking dish, heat olive oil over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until browned. |
4. Add minced garlic to the pan and sauté for another minute. |
5. Scatter cherry tomato halves around the chicken in the pan. Drizzle balsamic vinegar over the chicken and tomatoes. Add beans and corn on the side of the pan and drizzle with sea salt and olive oil. |
6. Top each chicken breast with slices of fresh mozzarella. |
7. Transfer the skillet or baking dish to the preheated oven. Bake for about 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly. |
8. Once done, remove from the oven and sprinkle chopped fresh basil over the chicken. |
9. Optionally, drizzle with balsamic glaze before serving for added flavor. |
10. Serve the Caprese chicken hot with a side of salad or crusty bread. |
