| - 1 3/4 cups all-purpose flour |
| - 1/2 cup granulated sugar |
| - 1/2 cup shelled pistachios, finely ground |
| - 2 teaspoons baking powder |
| - 1/2 teaspoon salt |
| - 1/2 cup unsalted butter, melted |
| - 2/3 cup milk |
| - 2 large eggs |
| - 1 teaspoon vanilla extract |
| - 1/2 cup chopped pistachios, for topping (optional) |
Instructions:- |
| 1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners. |
| 2. In a large bowl, whisk together the flour, sugar, ground pistachios, baking powder, and salt until well combined. |
| 3. In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract until smooth. |
| 4. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Be careful not to overmix, as this can result in dense muffins. |
| 5. Divide the batter evenly among the muffin cups, filling each about 3/4. |
| 6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. |
| 7. Remove the muffins from the oven and let them cool in the pan for a few minutes. Then transfer them to a wire rack to cool completely. |
| 8. Once cooled, top it with your favorite vanilla icing. I used store bought premade butter cream icing. And sprinkle some ground pistachios. |
