Huma's Organic Pistachio Muffins

Organic Pistachio Muffins. ??‍?? Made with love and care, my muffins are crafted using the finest organic ingredients. Each bite is a symphony of delicate flavors, with plump blueberries bursting with sweetness in every mouth-watering morsel. True essence of nature in every heavenly bite!

Ingredients:-
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup shelled pistachios, finely ground
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2/3 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped pistachios, for topping (optional)

Instructions:-
1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
2. In a large bowl, whisk together the flour, sugar, ground pistachios, baking powder, and salt until well combined.
3. In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract until smooth.
4. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Be careful not to overmix, as this can result in dense muffins.
5. Divide the batter evenly among the muffin cups, filling each about 3/4.
6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
7. Remove the muffins from the oven and let them cool in the pan for a few minutes. Then transfer them to a wire rack to cool completely.
8. Once cooled, top it with your favorite vanilla icing. I used store bought premade butter cream icing. And sprinkle some ground pistachios.
